测定原理

---

根据大豆不同品种的种皮所含的过氧化物的有无和多少有差异，使愈创木酚氧化成红棕色的程度也有不同，或不能使愈创木酚氧化而不变色，则可根据种皮浸出液反应颜色的差异，鉴定品种的真实性。其原理可用下列反应式表示：
