碘化钾溶液同种子的直链淀粉和支链淀粉反应的颜色有差异。直链淀粉产生蓝色，而支链淀粉生成紫色或红紫色。由于水稻中籼稻(直链淀粉25%以上和支链淀粉75%)、粳稻(直链淀粉17%和支链淀粉80%以上)和糯稻(直链淀粉0%和支链淀粉100%)种子所含淀粉类型的差异，籼稻种子碘化钾染成蓝色，粳稻染成紫红色，而糯稻染成红棕色。据此可鉴别水稻不同类型。
